Inspector Notes: Observed dishes, in several areas of the kitchen to not be stored in a position to protect them from any overhead contamination. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored: (i) In a self-draining position that allows air drying; and (ii) Covered or inverted. COS: PIC voluntarily placed all dishes in an inverted position to ensure that they are protected from overhead contamination.

Inspector Notes: Observed the cooler drawers and reach in coolers to have an accumulation of food and debris inside the gaskets. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC to clean all gaskets at the close of business and daily to avoid food debris and accumulation.
